Guided tours

Embark on an unforgettable journey to the heart of San Daniele del Friuli, where centuries of tradition and craftsmanship converge to create the world-renowned Prosciutto Crudo San Daniele ham (think Parma ham at new heights).Your adventure begins with a visit to a historic ham factory, where the art of prosciutto production has been perfected over generations. As you step into the facility, you’ll be greeted with the rich aromas of aging ham—a key ingredient of Friuli Venezia Giulia's gastronomic heritage. During the tour, expert guides will walk you through every step of the process, beginning with the arrival of fresh pork legs. You’ll learn how these legs are carefully salted to preserve their delicate flavors, then placed in specialized chambers to rest and mature.A key highlight of the visit is understanding the role of San Daniele's unique microclimate in creating the ham’s distinctive taste. Positioned between the Adriatic Sea and the Alps, this location allows for ideal conditions that impart an unmistakable flavor to the ham as it ages. Your guide will explain how each stage of curing and maturation—some lasting up to 18 months—ensures a final product of unmatched quality and texture. After exploring the intricacies of ham production, you’ll head to the adjoining osteria, a cozy, family-run establishment with a legacy dating back to the early 20th century. The lunch begins with a curated tasting platter that beautifully showcases the ham alongside locally sourced delicacies. Your plate will feature thin slices of the prized San Daniele ham, served with sweet-and-sour pickled vegetables, and regional cheeses, creating a harmonious balance of flavors.Complementing your tasting is a selection of wines from the nearby vineyards of Friuli Venezia Giulia. You’ll enjoy Friulano, a crisp white wine known for its delicate floral notes, or Merlot, a smooth red that perfectly enhances the savory richness of the ham. Both wines are sourced from the nearby estate, ensuring an authentic pairing that reflects the region’s rich viticultural traditions. The experience isn’t just about tasting—it’s about savoring the history behind each bite. The ham factory you’ll visit traces its roots back to the 19th century, when the Alberti family first began trading and crafting high-quality local goods.Beyond the delicious food and wine, this experience provides a deeper connection to the land and its people. It’s an opportunity to hear stories of perseverance, such as how the business survived the challenges of World War II and the devastating earthquake of 1976. These tales, passed down through the generations, are as much a part of the region’s culture as the ham itself.Whether you're a food lover, a history enthusiast, or someone looking to immerse yourself in the authentic flavors of Italy, this tour offers something special. You'll leave with not only a full stomach but also a newfound appreciation for the artistry and care that go into producing one of Italy’s most famous culinary treasures.
